Green lentils are full of fibre and good quality protein, so this is a lovely filling dish that will satiate the hungriest of mouths. It's packed with lots of hidden veggies full of vitamins and minerals and the avocado adds a dose of heart healthy fats, folate and potassium. Don’t be scared by fat - it's good for you and essential as part of a healthy diet. The creaminess of the avocado works so nicely with the tanginess of feta and the smoked paprika gives the dish a warming, smokey flavour. Delicious!
You need 1 onion (finely chopped)
1 stick of celery (finely chopped)
1 clove of garlic
1tsp smoked paprika
1tsp cumin powder
Pinch of chilli (optional)
2 x 400g canned green lentils (drained)
200ml of water
1/2tsp vegetable stock
1 red pepper (finely chopped)
2 salad tomatoes (finely chopped)
150g feta cheese
Handful of parsley to serve (all optional)
Saute the onion, celery and garlic for 8 mins, then add in the spices and the cans of lentils and stir for 1 minute, add in the diced pepper and tomatoes and cook for 12 mins.
Once warmed through, serve into your favourite bowls, top with feta and avocado and serve!
And there you have it - a super simple dish, ready in less than 30 mins that will nourish your body, mind and soul 💕
